Ingredients: - 250 g stale bread - 200 ml milk - 100 g speck (smoked ham), diced - 1 small onion, finely chopped - 2 tablespoons fresh parsley, chopped - 2 eggs - 100 g flour - Salt and pepper to taste - Meat broth Instructions: 1. Cut the stale bread into cubes and place them in a bowl. Pour hot milk over the bread and let it soak for about 10 minutes. 2. In a pan, sauté the finely chopped onion with a little olive oil until it becomes translucent. Add the diced speck and cook for a few minutes until crispy. 3. Drain the soaked bread from the milk and squeeze it well to remove excess liquid. Place it in a bowl and add the sautéed speck, onion, parsley, eggs, flour, salt, and pepper. Mix well until you have a homogeneous mixture. 4. Shape the mixture into balls with damp hands and boil them in plenty of meat broth for about 15-20 minutes until they become light and float to the surface. 5. Carefully remove them from the broth and serve them hot, accompanied by a portion of hot broth or with melted butter and grated cheese.
